Beans: Saute Onion and Garlic in Olive Oil. Add Beans, I used: Black Beans, Pinto and 1 can of Hominy. Next, add spices: Basil, Oregano, Cumin, Salt & Pepper. After you have cooked all ingredients together for about 5 minutes place 3/4 of the beans into blender leaving the 1/4 still in the pan, then marry the smooth textured beans with the whole beans in the pan now you have texture! For more texture split it 1/2 and 1/2!
Fresh Salsa: Chop: Tomatoes, Purple Onion, Cilantro, Fresh Jalapeno add Lime Juice, Salt & Pepper. For a creamer texture I added Plain Yogurt and chopped Avocado.
Atop: Carrot Shavings are a great texture-izer! Don’t forget some pickled Jalapenos for a little extra fun! Buen Provecho!!!

Steam Purple Cabbage Leafs, Spread Thin Layer Goat Cheese, Place Mixutre on Top.
Mixture-Sautee: Ground Italian Sausage (hot & sicilian)-1.5 lbs, Garlic-3 cloves, Julian Carrots-4, Seasonings…add Hominy- 6 ozs
